Paula Deen's Favorite Meals For Half The Calories and Fat

Dr. Oz sent out a challenge to Paula Deen to prepare some of her favorite dishes with half the calories and fat. If you are familiar with Paula, you are well aware of her affinity for high fat, decadent meals.  The charismatic Paula Deen was more than eager to meet Dr. Oz's challenge and share her recipes of succulent meals with only half the fat and calories!

Paula Deen's Low Fat/Calorie Oven Fried Chicken Recipe


Paula Deen's Low Fat/Calorie Chicken Recipe On Dr. Oz
Paula Deen's first recipe to meet Dr. Oz's challenge was Oven Fried Chicken. This is her recipe that she shared on the show :
Ingredients :
  • Boneless skinned chicken
  • Salt and Pepper
  • 3/4 Cup buttermilk
  • Cooking spray
  • 1 1/2 tablespoon Dijon mustard
  • 2 Cloves garlic
  • 1 1/2 teaspoons hot sauce
  • 1 Cup self rising low fat flour
Directions

Mix the salt and pepper with the buttermilk in a bowl. You then put in your chicken and let it marinate for 2 to 8 hours. After the chicken is done marinating you put them in a bag of the self rising low fat flour with salt and pepper.  You then put the chicken pieces on a baking sheet and bake for 30, 40, or 50 minutes.  The baking time differences are based on the size of your chicken that you are using.

Dr. Oz then did a comparison of Paula Dean's original Southern Fried Chicken Recipe. It had 1,221 calories per serving and 89 grams of fat.  This lower calorie, and lower fat recipe only has 579 calories and 38 grams of fat! I know which recipe I'm going to use!

Paula Deen's 1/2 Calorie, 1/2 Fat Famous Mac and Cheese Recipe


Paula Deen's Low Fat/Calorie Mac and Cheese Recipe on Dr. Oz
Paula Deen is famous for her Mac and Cheese. This is her "Dr. Oz" version of low fat and low calorie Mac and cheese.  Paula uses whole wheat pasta in this recipe.  Makes 4-6 servings based on the ingredients. Adjust accordingly for larger or smaller preparations.

Ingredients

  • 2 Cups whole wheat macaroni (2 cups is approximately 8 ounces)
  • 2 cups (8 ounces) of low fat cheddar cheese
  • 1/2 cup evaporated reduced fat milk
  • lightly beaten large eggs
  • 1 tablespoon of Dijon mustard
  • 1/4 cup reduced fat sour cream
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of cayenne pepper
  • 1/3 cup of parmesian cheese
Cooking Directions

Turn on your oven and preheat to 350 degrees. While the oven is heating spray a 13x9 baking dish with cooking spray.

Heat a large pot of water (with a pinch of salt) to boiling point.  Cook the whole wheat macaroni according to the directions on the package. Drain the macaroni in a colander and then put the macaroni in a large bowl.  Add in the low fat cheddar cheese and stir until evenly mixed.

In another bowl, mix the evaporated milk, sour cream, eggs, Dijon mustard, salt, and cayenne pepper.  Add this mixture to the Mac and Cheese and mix until combined evenly. Then you put the mixture into the baking dish that you sprayed with cooking spray earlier.  Sprinkle parmesian cheese evenly over the top of the Mac and Cheese.  Bake until golden brown and crispy around the edges. In most ovens this takes about 35 to 40 minutes.  Serve and enjoy Paula Deen's low fat and low calorie Mac and Cheese!

Paula Deen's Original Mac and Cheese is 840 calories and 44 grams of fat.  Her "Dr. Oz" low fat/calorie version has 416 calories and 20 grams of fat!
